  18. Take 1 tbsp Coriander Powder
  19. Make ready 1/2 tsp Turmeric
  20. Make ready 1 tbsp Red Chilli Powder
  21. Make ready 1 tbsp Kasoori Methi
  22. Take 2 tsp Salt
  23. Make ready 1 tsp Garam Masala
  24. Prepare 1 Fennel Seed Powder
  25. Prepare 1/4 tsp Dry Mango Powder
  26. Prepare 2 cups Water
  27. Make ready 4 Boiled Potato

I have added here both the recipes of our family's favorite potato curry and the puri. However, this Punjabi aloo puri is a very popular Punjabi breakfast combination of poori + Punjabi aloo sabzi. Instructions to make Aloo Sabji Puri:
  1. Heat oil in kadai for puri.
  2. In a Bowl, take Wheat flour add oil, Ajwain and Salt. Mix well.
  3. Add water 1/2 cup and start kneading the dough.
  4. Add 1/4 Cup more water and knead. Add more water if needed. Keep it aside for 10 minutes.
  5. Take a medium sized ball of dough and roll it medium thick puri.
  6. Once the oil is heated, slide the puri to the oil.
  7. Get it till your desired colour.
  8. Scoop it to the side so the excess oil is removed.
  9. Put it on a Absorbent paper.
  10. In a big pan on medium heat, add ghee.
  11. Once the ghee is heated add Cumin, dry Red Chilli, Hing, Ginger and Garlic.
  12. Cook till the raw smell of ginger disappears.
  13. Add Bay Leaves and Mix.
  14. Now add Grinded tomato, Green Chillies and stir.
  15. Cook this mixture on medium heat while stirring in between till it thickens.
  16. Colour of the gravy would have become darker red.
  17. Now add the Dry Spices.
  18. Coriander Powder, Turmeric, Kashmiri Red Chilli Powder, Kasoori Methi,Salt, Garam Masala, Saunf powder and Amchur powder. Mix well. - Cook till the gray is dry.
  19. Now add water and mix very well.
  20. Add Chopped Boiled Potatoes and Mix.
  21. Cover the pan with a lid and cook on medium heat for 5 minutes.
